I’ve finally perfected my blender brownie recipe and I’m so excited to share it with you!
Figuring out what would work as the base to make the brownies fudgey was a bit of a challenge, and so worth it in the end.
This recipe is also super versatile because they can easily be made vegan and or protein packed (see optional ingredients and substitutions below).
If you’re following a low carb diet, these are great as well because they contain 6 grams of net carbs (9 grams of fiber)!
1 cup cacao powder
2 tsp baking powder
1/4 cup ground flax
1/3 cup honey (Can sub agave or 1/2 cup granulated sweetener of choice)
1 medium avocado
1/2 cup pumpkin (sub for 2 bananas and no eggs for vegan)
2 tsp. Vanilla extract
3 Tbsp almond milk
Dairy free chocolate chips
Preheat oven to 350 degrees F
Put avocado, pumpkin, almond milk, honey, eggs and vanilla extract in blender and blend until batter forms
Place all other ingredients, except chocolate chips in blender, blend until smooth brown batter forms
Place batter in greased 9×9 pan, sprinkle with chocolate chips and bake for 35-40 min
Let cool for 1 hour and enjoy!
