My Keto Experience: Day 4

*Written April 2018*

Hey guys! Sorry for the lateness of the post. Spent some time with my boyfriend last night and catching up on some Game of Thrones (I know we are super late to the game).

Plus, we hadn't seen each other all week so spending that quality time was really great.

Anyway, back to what you really want to read about, my update of day four on this keto adventure I am on. Honestly, each day has been getting easier. I woke up, feeling awake and "light on my feet" if that makes sense, LOL. Usually, it takes me a few minutes to get out of bed and not feel stiff, but today was such an improvement!

Typically with keto, constipation can sometimes be an issue, but (thank God) I have not had that problem. I've really been focusing on consuming extra electrolytes (I use the Ultima brand) in powder form, which in turn, helps me consume more water. This has been super helpful considering my fiber intake went from 60-70 grams to around 10 grams per day.

The biggest change I've noticed, especially in the morning, is my focus! I didn't realize how much of a fog I was in before starting keto and now its really apparent. I actually have more work on my plate now with my job, practice and school, yet I am completing tasks more quickly and efficiently, which just boosts my mood even more.

With all this focus and energy, I of course opted to hit the gym. It was chest day, but instead of focusing on heavy lifts, I focused more on stability and volume. You'll notice on my Instagram posts that I am literally obsessed with resistance bands and have now incorporated them into every workout. I decided to take my workout one step further and added in a Bosu ball and free weights, which really was a challenge. I was pleasantly surprised to see that after the 2nd set I was able to perform the movements pretty effortlessly and got to record and post it on Instagram as well!

Usually after the gym, I am really hungry, but that feeling has also dissipated. I am able to go longer, post workout, without eating, which is helpful considering I had a few errands to run. One errand specifically was food shopping. Now, I will admit, I am a snob when it comes to what grocer I go to, which is Whole Foods. It is literally a 5 minute drive from my gym, so please take that into account as well. Now, going into keto I knew my diet would be restricted to specific foods, but the amazing thing about this is how much I save! My bill was literally half of what I usually spend, which, when you're in school, paying out of pocket, is super helpful! The types of foods are similar, minus some lean protein sources (more focus on high fat proteins), carbs (like my fave, popcorn) and starchy veggies (sweet potato, squash, green beans, snap peas).

In case you were wondering, this is what I purchased (see hyperlinks for brands I like)....

romaine lettuce

alfalfa sprouts

horseradish

spinach

cilantro

basil

parlsey

radish

fermented carrot/ginger

fermented dill pickles

almond butter

sprouted pumpkin seeds

organic, pasture raised eggs

almond/coconut base creamer

red wine vinegar

organic, free range ground chicken (dark meat)

mustard

hot sauce

Sparkling water

Anyway, when I got home and put my groceries away, I broke my fast at 2:15pm with 3 whole eggs, 2 Tbsp. olive oil, one 9oz package of spinach, 2 cups of raw chopped bella mushrooms, 2 Tbsp. sauteed leeks (prebiotics!) and 5 Tbsp almond butter with cinnamon and topped with 1 Tbsp sprouted pumpkin seeds. I know this is getting repetitive, but its just an easy meal to put together and eating the same thing throughout the week is cheaper and I actually really look forward to this meal. You know how most people say, I could eat pizza or ice cream or cake every day... Well I feel the same way about this meal, if you can imagine that!

I think one of the most amazing things I've noticed is my digestion is fantastic! Even after consuming tons of veggies before I started this, I would get bloated and feel really lethargic post meal. Now, I just feel energized and continue on with my day. I have zero bloat and my stomach stays flat the entire day. Now my focus is health, not having a flat stomach, but I'm still a girl, and have a heightened awareness of how I look, so sue me.

The remainder of my day was pretty basic, but again, that heightened sense of motivation and focus really helped with a work project I anticipated finishing by Monday and here I was done with it on Thursday! When I was done with work, as mentioned earlier in this post, I went to spend some time with my boyfriend. Now I didn't pre pack anything to bring for dinner and unless I go food shopping with him, all you will find in his fridge are condiments and take-out left overs. Trader Joe's (another fave of mine) was on the way to his place, so I stopped in and grabbed some things to make dinner for him and I. Now get ready for the shocker.... to make my dinner and his along with having left overs for him for 2 more meals, I spent a whopping $20! The realization that this diet is helping me save money and improving my health (from what I can tell so far) is just adding to me staying consistent and motivated.

For dinner I made a mixed greens salad with one medium cucumber chopped, chopped cilantro, sauerkraut, horseradish, tossed in a red wine vinegar and EVOO dressing (3 Tbsp.) and topped with 1/3 cup hummus. Oh, I also had another side of almond butter (6 Tbsp. - ish). Now the amounts I am estimating because I did not have my food scale and I have some confidence in my "eye-balling" ability, so I just went with it. I may have overdone it on the almond butter, because I usually do, but hey, you have to live a little. Even without measuring, and I'm sure I was off a bit, again my digestion was fine and I didn't feel bloated at all. I have to reiterate what an amazing change this is for me, because I've battled with digestive issues on and off for years. I always preach one size doesn't fit all regarding nutrition and for me, I think my body just responds better to high fat. Now its still too soon to tell, but that is my guess.

As always I will place my stats below, but no pictures this time, because, even though I do see changes in my body daily, I don't want this to become an obsessive thing and only focus on my physique changes. It took me a long time to focus more on internal health versus external appearance and I want to remain on that path.

I hope you are continuing to enjoy my updates and stay tuned for Day 5!
