Immune Boosting Green Goddess Soup

With flu season upon us, I thought it might be time for an immune boosting soup recipe that is delicious and easy to make. You literally only need a blender, a pot and about 5-10 minutes. Many of the ingredients are also great for detox and boosting energy as well!


Ingredients (makes 1 serving):


3 cups baby spinach

1 clove whole peeled garlic

2 Tbsp fresh ginger, sliced

1/4 tsp cayenne

1/4 tsp ground turmeric

1/2 tsp sea salt

1 cup mushroom broth

1/2 cup unsweetened coconut milk

1/8 tsp black pepper

1/2 tsp lemon or lime juice


Garnish:


Chia seeds

Pumpkin seeds

Unsweetened coconut cream


Directions:


Place all ingredients in a blender and blend until mixture is smooth

Place mixture in a pot and heat to desired temperature

Top off with a sprinkle of chia seeds, pumpkin seeds and a drizzle of coconut cream
