Recently, US News and World Report released the top diets for 2018.
At the top of the list was the Mediterranean Diet which focuses on consumption of high fiber veggies, whole grains, healthy fats (esp. olive oil) and small amounts of protein (esp. from fish). This inspired me to create this crock pot recipe not only because it encompasses this way of eating, but also because it is quick and easy.
As a Nutritionist, needless to say I appreciate anything that allots me more time for school and work. I also work with many clients who work full time and/or have families and sharing this type of recipe and many others on this blog help make their day a bit easier and I hope it does the same for you as well!

2 cups uncooked basmati rice
3 cups water
1 cup vegetable broth
5 Tbsp. olive oil
2 cups sliced cherry tomatoes
4 cups raw spinach
2 cans red kidney beans
1 Tbsp. minced garlic
1 Tbsp. onion powder
1 Tbsp. sea salt
1 tsp black pepper
Place rice, water, broth and olive oil in crock pot, cover and put on high heat setting for 3 ½ hours
Once rice cooked, mix in all other ingredients
Serve and Enjoy! (Makes about 6-8 servings)
