Coconut Crusted Cod

This weekend was super laid back so my boyfriend and I decided to stay in and make dinner Friday night. Well, I was the one making dinner, while he hovered a bit and washed each pot, pan and dish as I was finishing using them, lol. I’ve been on a coconut kick lately so I decided to throw together some coconut crusted cod and paired it with some veggies and rice aka the “lazy mans dinner”. Now I am not one to “toot my own horn”, but this time, I’m definitely going too because that fish was delicious!

What’s even better is that I only had to buy the fish to make this recipe because I had everything else at home! This fact made it a great money saver and it only took 30 minutes to make, which includes the 20 minute cook time! Sometimes that is one of the greatest victories and signs of progress when you can whip a recipe up in your mind (with a little help from Pinterest) in literally 10 minutes. Now, I wasn’t always like this, believe you me. In college all I would eat was Easy Mac, Reese’s peanut butter cups and the occasional fried chicken Caesar wrap. Once I found out I was gluten and dairy intolerant around 2013, I got a bit more savvy in the kitchen and my passion for cooking just continued to grow. My hope for you is that you gather some inspiration here to build a love for cooking and continuing your journey toward eating healthily!

Ingredients: (see links to ingredients I use below!)

– 1 lb wild caught cod filets – 1/4 cup coconut aminos – 1/4 cup coconut creamer – 1 cup unsweetened finely shredded coconut – 1/2 tsp Sea salt – 2 tsp Onion powder – 1 tsp Garlic Powder – 1/2 lime

Directions:

– Pre-heat oven to broil (500 F) – Combine aminos and creamer in large bowl – Place cod in amino, creamer mixture and let sit for 5 minutes – Place cod in oven safe pan, making sure filets do not touch – Sprinkle sea salt, garlic powder, onion powder on filets evenly – Squeeze juice from 1/2 lime over filets – Sprinkle shredded coconut evenly over filets

– Cook for 20 minutes, remove from oven and let dish sit for 5 minutes

– Serve and enjoy!
