Chocolate Coconut Banana Oats

Hey guys!

So I threw this tasty recipe together with ingredients I had in my house to use up some things and it came out AMAZING!

I'm very much about sustainability and try my best to never waste food and eating healthy doesn't have to be complicated or time consuming. This recipe takes 5 minutes to make and only one pot, which is super helpful for me because I hate doing dishes!

1/2 cup gluten free steel cut oats

1/3 cup egg whites (can substitute 1 scoop protein powder if preferred)

1 tsp. cinnamon

2 tsp. coconut oil

1/2 banana

1 Tbsp. enjoy life chocolate chips

1 tsp. maple syrup (can also use honey or agave)

1 1/2 cups unsweetened coconut milk (can also use almond or cashew milk)

OPTIONAL: collagen powder, maca, chia seeds, ground flax, golden milk powder, turmeric


Place coconut milk in pot and heat until slightly boils

Lower heat to simmer and add cinnamon, coconut oil, maple syrup and whisk until blended

Add oats to pot, whisk and cook for 2 minutes (stirring occasionally)

Take half of the banana, dice, place in pot and mix until blended

Whisk in egg whites until blended. Let cook for 1-2 minutes

Pour mixture into bowl and top with remaining banana sliced and chocolate chips
